Healthy homemade baked beans
Believe me this is sooo much nicer than the tinned ones!
Now don’t go comparing the time it takes to make this recipe for my healthy homemade baked beans with bacon to opening a tin of baked beans, there is no comparison! Instead compare this to the time it takes to make a balanced dinner, the prep time involved in this is 10 mins max, you are mostly opening tins and added a sprinkle of this and a dash of that! I love the idea of breakfast at dinnertime or having a supper instead of a big dinner, regardless of what you call it above all else it should be simple, quick, healthy & balanced.
SHOPPING LIST & METHOD
SERVES 4
- Preheat oven 180C
- Fry 2 red onions & 2 cloves crushed garlic in an oven proof pot
- Add 6 bacon medallions – chopped – fry (this is optional I also do without bacon)
- The add;
2 large tins of beans (e.g. butter beans/cannelloni/kidney)
2 tins chopped tomatoes
1 tsp maple syrup
2 tsp balsamic vinegar
1 tsp sage
1/2 tsp paprika
Season
Transfer to oven for 20 mins at 180C - Lastly, top with a little cheddar cheese with 10 minutes of cooking time
Weight management tip!
Use a fine grater for cheese rather than a big box grater – you will use significantly less cheese this way. Also, using an extra mature cheddar or Parmesan is a good idea, because they are stronger you will need less!
This is a perfect breakfast, brunch, lunch, supper or dinner. Don’t think dinner has to be a certain thing, what it should be is balanced and healthy. People put themselves under so much pressure mid-week, do yourself a favour and keep a couple of recipes like this one up your sleeve. Bonus points that kiddies and hubby also love, with and without bacon.
